Fire Up the BBQ Conversation with Lexington Betty Smokehouse

Join Lexington Betty Smokehouse for a discussion panel on February 25 about Chicago-style barbeque. At the discussion, Chicago’s foremost barbeque pitmasters will converse about the meaning of Chicago barbecue over delicious dishes of their own.

IGNITE THE CONVERSATION

On February 25 from 4:00 p.m. to 6:00 p.m., this two hour event brings together some of Chicago’s most respected chefs, pitmasters, and journalists to discuss Chicago’s barbecue style. Chef Dominique Leach of Lexington Betty Smokehouse hosts chefs Brian Jupiter, Daniel Hammond, and Ron Conner. Joining them are journalist Monica Eng of Axios Chicago and Mike Gebert, the co-author of Made in Chicago: Stories Behind 30 Great Hometown Bites, and a James Beard Award-winning food writer/video producer. 

The discussion will be moderated by Catherine Lambrecht of the Culinary Historians of Chicago. Proceeds from the event will go towards the American Midwest Scholarship fund, which financially supports the study of Midwestern foods and food-related institutions.

With the $25 tickets to enter the discussion panel, guests will also be served special dishes by the attending chefs. Dominique brings smoked pork belly with kimchi fried rice & sweet & Sour BBQ sauce. Ron will serve rib tips with a raspberry chipotle glaze with garlic parmesan sweet corn. Brian gives smoked pork cheeks with rice grits and smoked bacon vinegar. Finally, from Daniel, try Chicago coffee rub smoked prime ribeye sliders topped with a chipotle giardiniera slaw coupled with smoked mango jerk winglets with pineapple chutney jerk BBQ sauce.

ABOUT LEXINGTON BETTY SMOKEHOUSE

Chef Dominique Leach started Lexington Betty Smokehouse as a tribute to her grandmother, Betty King. Growing up, Dominique remembers her grandmother’s delicious smelling meals filling her home. Inspired by those sweet-smelling memories, Dominique and her wife Tanisha have been serving Chicago-style barbeque at Lexington Betty Smokehouse since 2016.
