Chef/Owner Roy Yamaguchi opened his original namesake restaurant in Honolulu in 1988, now his Hawaiian-fusion chain has 30 outposts. The upscale dining room has floor-to-ceiling windows, colorful wall-art and a bustling open display kitchen. The menu favors seafood, but offers a few meaty choices. Look for signature dishes like misoyaki butterfish in soy vinaigrette, wood-grilled Szechwan-spiced baby back ribs and hibachi-style grilled salmon.
