Chef-owner Emilio Gervilla is one of the Spanish tapas pioneers of Chicago -- he opened his first eatery in 1988, well before the tapas boom of the past few years. Look for sharable choices like "berenjenas brasedas," grilled eggplant stuffed with goat cheese and topped with tomato basil vinaigrette; "lomo de cerdo al ajillo," pork tenderloin medallions with white wine sauce, peppers and garlic potatoes; and "champinones rellenos," mushroom caps stuffed with mozzarella, spinach and onions. Heartier fare includes "paella a la Valencia," chicken, pork, lobster, shrimp, mussels and clams in saffron rice.
