Inspired by years of world travel and research, ZED451’s internationally-minded menu is led by Executive Chef John Radcliff. At ZED451, Chef Radcliff leads a legion of approximately 30 chefs – many of whom are currently attending or are recent graduates of culinary school – whose purpose will not only lie in preparing the food, but also presenting and serving it tableside to guests.
ZED451 guests may begin their dining experience at one of the seasonally-driven Harvest Tables, offering an extensive array of housemade soups; artisanal cheeses; breads; charcuterie; salads; and side dishes, such as: Thai Cucumber Coconut and Bloody Mary chilled soups; Strawberry Rhubarb Spinach Salad; Steamed Baby Bok Choy with a sweet orange and chili garlic glaze; Poached Red Wine Pears with an orange and balsamic dressing; and Roasted Pineapple “Madagascar” with brown sugar, orange juice and peppercorn. Breads are accompanied by a variety of spreads such as housemade Hummus, Tapenade and Chipotle Honey Peanut Spread; and condiments like Pickled Cranberries and housemade Bread & Butter Pickles are just a few of the internationally-inspired items to be offered.
ZED451 chefs are encouraged to present their very own amuse-bouche to their guests, allowing them to showcase the most seasonal ingredients and preparations – a fine dining touch with an interactive approach.
Once guests are ready to begin their hot prepared dishes, they simply indicate to the ZED451 chefs who then begin presenting and serving their distinctive specialties tableside, each prepared with housemade marinades, rubs and their very own seasoned touch. The offerings may include: Citrus Salmon seasoned with orange, lemon and lime zest; Aged Grilled Rib-Eye; Buttermilk Marinated Bottom Sirloin; Goat Cheese Encrusted Rack of Lamb; Slow Roasted Short Ribs with housemade horseradish cream sauce; Mediterranean Chicken Breast marinated in olive oil, citrus zest and fresh herbs; Parmesan Crusted Pork Loin; a daily fresh fish; and more, all cooked to perfection over an open charcoal fire.
The table is also presented with a choice of two, complimentary Market Side dishes during the meal such as Roasted Wild Mushrooms, Savory Gruyère Bread Pudding; and Cauliflower Au Gratin.
If a guest would like to pause or end their entrée selection, they again simply indicate to the chefs. ZED451 offers a guest-focused, intimate dining experience. No ordering, no waiting – diners are allowed complete control of their meal from what they eat to how much and when.
To complete the meal, guests will enjoy seasonal, comfort-inspired indulgences like fresh fruit cobblers and housemade ice creams to crème brûlées, cookies and more.
ZED451 will also offer a gourmet brunch every Saturday and Sunday, featuring a variety of both traditional and exotic dishes such as Housemade Corned Beef Hash with spinach and egg; Italian Fruit French Toast with lemon curd, housemade vanilla whipped cream and Vermont maple syrup, in addition to the meat, fish and Market Side dishes. ZED451’s style of service and wide array of delectable offerings are ideal for a leisurely weekend, late-morning meal.
ZED451 offers a fixed-price menu: $49.50 for dinner and brunch, which includes unlimited offerings of the Harvest Table, meat, fish and Market Side dishes. For those who wish to dine solely from the Harvest Table, the price is $25.50 for dinner and brunch. Children ages six to ten are $24.95; ages five and under are complimentary.
An important aspect to the ZED451 philosophy is the opportunity for diners to enjoy a variety of food. The fixed-price menu encourages sampling. “We want to take the risk out of dining,” explains Chief Operating Officer Daniel Harf. “You can try everything here, including things you’ve never tried before. If you enjoy it, please have more.”
The attention to seasonality can also be found in ZED451’s “Liquid Market” offerings. “We give the same love to the cocktails as we do the food,” says Harf. Eight specialty cocktails – many of which will be made with house-infused spirits – will be introduced each season. This spring, ZED451’s cocktails offer refreshing flavors such as the Cucumber Sage Martini with fresh cucumber and sage mixed with lemon and Hendrick’s gin; Gingered Bourbon Lemonade, composed of citrus infused Woodford Reserve Small Batch Bourbon with freshly-squeezed lemonade and a zesty ginger kick; and the Kiwi Strawberry Martini with fresh kiwi and strawberries blended with Reyka vodka and housemade sour mix. “They’re modern with a fresh approach,” he says. In addition, ZED451 offers nearly 30 wines by the glass and a savvy, comprehensive bottle program.
ZED451 will also feature an in-house, triple-filtration water system offering guests still and sparkling waters free of charge.
Just as ZED451’s cuisine is inspired by home entertaining, so is the design. Offering various destinations from the main dining room to the 451 Lounge to the 451 Rooftop, ZED451 will reflect a contemporary design in an atmosphere that is warm and stylized.
Guests will be welcomed by a two-story glass atrium featuring a black slate tile floor, a dual-sided fireplace that extends to the rooftop, lush foliage and a sweeping staircase leading up to the rooftop lounge. Once greeted by the host, guests may opt for a cocktail, glass of wine or light noshing in the 451 Lounge. With wooden floors, a large rectangular bar, lounge seating and the dual-sided fireplace with hearthside seating, the 451 Lounge is ideal for a cozy date or group gatherings…particularly with a tailored menu of artisanal cheese plates, charcuterie, fondues and variety of skewered meats accompanied by a number of sauces and individuals hibachis.
Adjacent to the 451 Lounge is a glass-ensconced wine room with an intimate table in the center and a custom-made chandelier featuring 140 wine glasses. Or, if one is seeking a more intimate gathering, ZED451’s 12-seat wine bar will serve as an ideal stop.
The heart, and focal point, of the restaurant’s 15,000-square-foot first level is the circular fire pit, located in the center of the dining room and extending 40 feet up to the second level. Four, large wooden communal tables with seating for eight extend from the pit, and Harvest Tables abound throughout the room, lending energy and interaction to the dining room. An open kitchen along one side of the room provides guests with a first-hand look into ZED451’s lively kitchen – and for those who wish to see it up close and personal, eight counter seats allow the guest to dine amidst the action.
From the main dining room, floor-to-ceiling windows will open onto the sidewalk, allowing up to 30 guests to be seated along Clark Street in the warmer months. The tailored menu available in the 451 Lounge will be offered here, along with ZED451’s seasonal cocktails.
With the second level comes an intimate dining space – ideal for private events – featuring a full-service bar, Harvest Tables and another fireplace. This level also showcases a cantilever deck with circular banquettes and tables seating up to 30, offering guests a privileged view of the bustling room below. Both of ZED451’s levels maintain flexible dining space that can easily morph to accommodate an intimate group of 10 to parties of up to 200 or more on the first level and 90 or more on the second.
Offering a unique, cavernous view of the Chicago skyline, the 451 Rooftop will be a destination unto itself. Fire, again, comes into play with a large fireplace and hearthside seating that will keep up to 100 guests warm and aglow as they enjoy seasonal cocktails and tailored menu offerings. At 2,300-square-feet, the 451 Rooftop will also feature a full-service bar, real grass and foliage, and an impressive copper-roofed clerestory showcasing the 451 Lounge below.
ZED451 offers a fixed-price menu: $24.50 for lunch and $42.50 for dinner; includes the Harvest Table, unlimited meat and fish specialties, and dessert. For those who wish to dine solely from the Harvest Table prices are $18.50 for lunch and $24.50 for dinner. For families, children ages 10 and under, prices are $12.25 for lunch and $21.50 for dinner. And throughout the meal, the guest will be entirely in control.
ZED451 is also located in Downers Grove, Ill. (3008 Finley Rd.) and Schaumburg, Ill. (801 E. Algonquin Rd.) – each debuted in late June 2007 – and plans to open in Boca Raton, Fla. in late 2008 and Orlando, Fla. in early 2009.
