Custom House, led by Shawn McClain, named Best Chef Midwest by the James Beard Foundation in 2006, focuses on offering the finest artisanal meats and fresh, seasonal ingredients. Unlike most classic steak houses, Custom House allows carnivores to savor their meat raw, cured, marinated, braised, roasted and slow-cooked.

The kitchen cures bacon and pancetta in-house, and creates their own terrines and pates. Along with serving top quality meat, Chef McClain also offers a selection of seasonal side dishes à la carte, using only the freshest, seasonal produce, much of which comes from Home Grown Wisconsin, a group of sustainable growers. Named for the historic Custom House Levee District where it resides, Custom House is located in Chicago’s South Loop neighborhood.
