Located on the 40th floor of the Chicago Stock Exchange, this elegant, refined restaurant has stellar western views of the city through floor-to-ceiling windows. The cream and black dining room features polished gold railings, dimly lit chandeliers and original artwork and sculptures. Chef-proprietor Jean Joho has earned considerable kudos; Everest has received the Five Diamonds from AAA; Four Stars from The Mobil Dining Guide, plus four stars each from Chicago magazine, the Chicago Tribune and the Chicago Sun-Times. The highly seasonal ingredient-driven French menu changes frequently, but recent offerings included entree choices like a filet of wild sea bass baeckaoffa Alsace-style, filet of halibut wrapped and roasted in garlic, and poached tenderloin of beef pot-au-feu-style with horseradish cream. A seven-course degustation menu is also available, plus a three-course pre-theater degustation. The award winning wine list offers over 1,400 selections and features an impressive collection of Alsatian wines.
